Ruben is a dedicated chef who specializes in Japanese cuisine at Jimoto SATX Hospitality. With over ten years of experience, he has become an advocate of Japanese dining.

In 2023, he started a new venture called Nineteen Hyaku with Carpenter Carpenter Hospitality, offering a unique blend of contemporary sushi and robatayaki. Nineteen Hyaku is known for its excellent Omakase experience.
